Ingredients

  • 2 chicken breasts (about 300 g total)
  • 150 g brown rice, uncooked
  • 300 g broccoli, cut into florets
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 100 g plain Greek yogurt
  • 1 small garlic clove, grated
  • Juice of half a lemon
  • Salt and black pepper

Method

  1. Cook the brown rice according to the packet instructions, around 25 minutes.
  2. Rub the chicken with olive oil, paprika, salt and pepper.
  3. Pan-fry over medium heat for 6–7 minutes per side, until cooked through, then rest for five minutes.
  4. Steam the broccoli for four minutes while the chicken rests.
  5. Mix the yogurt with the garlic, lemon juice and a pinch of salt.
  6. Slice the chicken and serve over rice with broccoli and the sauce.

Substitutions

  • Roasted tofu or chickpeas make a straightforward vegetarian version.
  • Any grain works: quinoa, bulgur or barley.
  • Frozen broccoli steams directly from the freezer.

Storage

Refrigerate within an hour and eat within three days. Reheat rice until piping hot.
