- 2 chicken breasts (about 300 g total)
- 150 g brown rice, uncooked
- 300 g broccoli, cut into florets
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 100 g plain Greek yogurt
- 1 small garlic clove, grated
- Juice of half a lemon
- Salt and black pepper

Method
- Cook the brown rice according to the packet instructions, around 25 minutes.
- Rub the chicken with olive oil, paprika, salt and pepper.
- Pan-fry over medium heat for 6–7 minutes per side, until cooked through, then rest for five minutes.
- Steam the broccoli for four minutes while the chicken rests.
- Mix the yogurt with the garlic, lemon juice and a pinch of salt.
- Slice the chicken and serve over rice with broccoli and the sauce.
Substitutions
- Roasted tofu or chickpeas make a straightforward vegetarian version.
- Any grain works: quinoa, bulgur or barley.
- Frozen broccoli steams directly from the freezer.
Storage
Refrigerate within an hour and eat within three days. Reheat rice until piping hot.
