Quinoa and Salmon Bowl

Ingredients

  • 150 g quinoa, rinsed
  • 2 salmon fillets (about 130 g each)
  • 150 g broccoli florets
  • 2 handfuls of spinach
  • 1 lemon
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and black pepper

Method

  1. Simmer the quinoa in 300 ml water for 15 minutes, then rest covered for 5 minutes and fork through.
  2. Heat the oven to 200°C. Season the salmon, add oregano and a squeeze of lemon, and bake for 12–14 minutes.
  3. Steam the broccoli for 4 minutes and wilt the spinach in the residual heat.
  4. Dress the quinoa with olive oil, lemon juice, salt and pepper.
  5. Build the bowls with quinoa, greens and flaked salmon.

Substitutions

  • Tinned salmon or sardines work and cost less.
  • Brown rice can replace quinoa.
  • Use frozen broccoli straight from the bag.

Storage

Keeps for two days in the fridge. Eat cold or reheat the quinoa and fish separately.
